The red dirt roads of Kauai

are nothing if not serendipitous.

Twenty-three year old me met John and Daphne McClure, who farm between Kapa’a and Kilauea, by absolute chance one day.

They invited me to see their fermentation process at Moloa’a Bay Coffee as well as their cacao trees, and shared with me the sweetest pitaya I’ve ever tasted.

I had the honor of being one of the first people to temper their farm-to-market chocolate.
